The functionality of the Escargot decanter lies primarily in the double aeration of the wine. The first occurs during the transfer of the wine from the bottle to the decanter, when the contents of the bottle are exposed to more oxygen. To transfer, lift the decanter from the horizontal to the vertical position. The second aeration is created by pouring the wine from the decanter into glasses. To do this, grasp the decanter by the hole at the bottom of the decanter. The shape of the decanter speeds up the entry of fresh air into the already aerated wine. This process creates a gurgling sound.

"Personally, I prefer decanting for both young and more mature wines. In the case of mature wines, decanting is an expression of respect; in the case of young wines, it is an expression of trust. Decanting mature wines shortly before serving ensures that the colour and clarity are not impaired by sediments that have formed in the wine during storage. Decanting young wines a few hours before serving will give the wine the opportunity to develop its bouquet, to acquire a degree of maturity that it would otherwise only achieve with years of storage."
