In the case of mature wines, decanting is an expression of respect; in the case of young wines, it is an expression of trust. Decanting mature wines shortly before serving ensures that the colour and clarity are not impaired by sediments that have formed in the wine during storage. Decanting young wines a few hours before serving will give the wine the opportunity to develop its bouquet, to acquire a degree of maturity that it would otherwise only achieve with years of storage."
