The WÜSTHOF sharpening stone allows you to restore the edge of your knife. Grinding with grinding stones is very fine. The stones are manufactured in different roughnesses. Start sanding on the coarse side, polish on the finer side. The brown side of the stone has a fine grit of 1000 J designed for removing small scratches and sharpening dull knives. The blue side with a grit of 3000 J is then used for routine maintenance of the blade.

Use:

  1. Before use, soak the grinding stone in water and leave it submerged for about 5 to 10 minutes. If air bubbles no longer appear when you move the stone, the stone has already absorbed the optimum amount of water and you can remove it from the water.
  2. Place the stone on a non-slip surface. Keep it sufficiently wet throughout the grinding process.
  3. With one hand, grasp the handle of the knife firmly, with the blade pointing towards your body. In this position, place the blade against the grinding stone at an angle of 15-20°. Place your free hand on the blade of the knife, above the edge of the blade.
  4. Pull the knife up and down at a uniform speed, maintaining the angle. Use moderate pressure.
  5. To sharpen the other side, turn the knife to a position where the blade is pointing away from the body. Again, maintain an angle of 15-20°.
  6. The sides of the knife should be alternated regularly in approximately five to ten movements to ensure even material loss.
  7. To remove the "needle" (a thin piece of steel created by evenly removing material from both sides of the blade), use the knife to draw an arc from the top left edge of the blade to the bottom right edge. Then hold the knife under running water to clean the blade. Dry carefully.
