The ZWILLING® Pro Santoku knife belongs to the Asian knives. It boasts a wide and above all sharp blade. This jack of all trades from Asian cuisine can be used in three ways: for preparing meat, fish and vegetables. All Santoku knives manufactured by ZWILLING J. A. Henckels have a finely polished blade. The higher polished facet reduces friction, so slicing is more precise and requires less effort.

Thanks to the textured cut surface of the blade, it is the perfect tool for slicing, for example, thin slices of ham - the cut on both sides of the blade ensures that soft foods do not stick. You will also appreciate the excellent blade of the Santoku knife when slicing tomatoes, whose shape and texture do not change during slicing.

The Solingen brand ZWILLING is constantly innovating its products. With almost three centuries of experience and the help of Italian architect and designer Matteo Thun, the German company ZWILLING J. A. Henckels series of ZWILLING ® Pro knives, which blends the traditional look of the three-rivet handle with the innovative shape of the knife guard. This curved bolster allows for unrivalled comfort when cutting with a cradling motion.

For the ZWILLING® Pro knife series, the company's designers considered several aspects: appearance, form, function, material and the feeling of use. The blend of tradition and innovation has resulted in a phenomenal series of knives of top quality and perfect shape with a blade combining European and Japanese cutting culture. The slim handle intuitively guides you to a secure grip, the knives are sharp, comfortable to hold and long-lasting.

Technologies and materials used

For the production of the knives, special high-quality steel with an optimum amount of chromium and carbon is used, produced according to specific requirements exclusively for ZWILLING J. A. Henckels. With a Rockwell hardness of approx. 57 HRC, this steel is flexible, has good initial cutting performance, long blade life and perfect corrosion resistance. Knives made of this special steel are also easy to sharpen. Confirmation of the correct "recipe" for its production is the fact that over 100 million knives have already been made from it without any change in chemical composition.

The properties of the steel are further enhanced for the purpose of knife production by a special patented FRIODUR® hardening method, whereby the steel is frozen to -70 °C after heating to a temperature of over 1000 °C and hardening to -70 °C and then heated twice more to a temperature of approx. 250 °C. The resulting molecular structure significantly increases the hardness, toughness and corrosion resistance of the knife.

The blade of the knife is forged from a single piece of steel using the SIGMAFORGE®method, which improves the properties of the steel. Blades forged in this way have a denser and more homogeneous structure, which ensures greater strength, toughness and resistance to dulling.

The stable blade and the perfect geometry of the blade result in exceptional cutting performance and precise control in the cut. The sharp angle provides even more sharpness, which makes slicing more enjoyable. Thanks to the wedge-shaped cut, the knife penetrates food effortlessly.

The Pro Touch crossguard is integrated as part of the one-piece steel blade. Ensures correct weight distribution and ensures precise knife control. The fitting on the bolster of the ZWILLING® Pro knives smoothly transitions to the top of the ricasso for an even more comfortable grip.

The ergonomic handle is made of a durable synthetic material that is shatterproof, impact-resistant or resistant to food acids. It is dishwasher safe. The handles are attached to the tang by three rivets. The perfect bonding of the individual parts prevents the trapping of deposits and bacteria, so the knives meet strict hygiene standards.

Maintenance of ZWILLING knives

Knives with plastic handles can be washed in the dishwasher, but it is recommended to wash them by hand, which is gentler on the knife. If you prefer to wash in the dishwasher, please bear in mind that high-quality knives can be damaged if they come into contact with other cutlery, pots or pans during the washing process. When putting dishes in the dishwasher, it is therefore essential to check that the blades of the blades cannot touch other objects. The manufacturer also recommends an economy programme with a maximum temperature of 55 °C for possible use of the dishwasher.

Every knife needs to be sharpened from time to time. Santoku knives which have a special blade, are no exception. TWIN Stone Pro and TWIN Finishing Stone Pro are suitable for sharpening ZWILLING Santoku knives . We also offer original sharpening directly at the manufacturer - we can arrange for the knife to be sent to ZWILLING J. A. Henckels in Germany. If necessary, we can also recommend a cutlery with experience in sharpening ZWILLING knives in Prague.
