This traditional Japanese knife has many uses in the preparation of seafood, meat and vegetables. The special cut on the blade creates air pockets that minimize the adhesion of food to the knife and allow for extremely fine cuts.
The exclusive 1905 design series combines traditional craftsmanship in a modern spirit with elements of historical design. In 1905 Friedr. Dick developed a series of chef's knives with solid joints to replace the rivets previously used. Since 1905, this unique design has been further developed using modern materials and manufacturing techniques. The blade is made of special German stainless steel XcrMoVMn. A unique, finely dispersed flexible material with a dynamically sharp blade has been produced using a challenging hardening technology.
