The Chister sauté pan with cast iron "self-basting" lid ensures that whatever you cook in it is delicious and delicate. The "Chistera Drop-Structure" on the underside of the lid aids the continuous circulation of water in the pot, creating ideal conditions for slow cooking and braising. Cooking in Staub cookware is very easy not only thanks to the proven shape of the cookware, but also thanks to the material used.
With frequent using, a natural non-stick layer forms on cast iron cookware from the oils that penetrate the pores of the cast iron from the food being prepared. Drop-Structure Chistera
The innovative cast-iron lids with Drop-Structure Chistera for food softening were designed by designer Samuel Accoceberry, who has worked with the French brand Staub for many years.
Compared to other, convex lids that release condensed water at the edges of the cookware, the new Chister lids have the ability to allow condensed water to flow evenly in droplets all over the food being prepared. The food therefore does not dry out during cooking.
The special structure on the underside of the lid collects evaporated water and, thanks to its perfect shape, accelerates its circulation in the pot. If a large enough droplet forms, it is returned to the pot. The shape of the lid structure was inspired by the shape of the wicker racket chistera from the Basque game Pelota, which is used to catch and throw the ball. Thanks to a similar principle, the lid allows you to optimise the cooking results by returning the evaporated water back into the cooking process.
